Dose it leak proof ?

Yes, it is lined with a completely impermeable aluminum insulation membrane and the seams are joined by heat embossing (equivalent to welding). So it is completely leak-proof.

Why does water bead on the surface during use.

This is because the temperature difference between the inside of the backpack and the outside environment causes water vapor from the outside air to condense and adhere to the surface of the backpack, forming droplets of water (like an ice drink).
